Treating yourself once a week is very important in maintaining a healthy lifestyle. I know this may seem obvious but too many restrictions can really lead to more sweet cravings. This can potentially lead a person to veer off of their healthy path. We’re able to control our cravings when we treat ourselves mindfully instead of thinking of these times as cheating. Failing to treat yourself once a week can even result in binge eating making a non-issue a major one. This recipe below will help you treat yourself with less guilt and a lot of deliciousness. Enjoy!

Almond Butter Cookies

A delicious alternative to a classic cookie using almond butter and whole grains.

1.5 cups whole wheat pastry flour or whole wheat flour

1 tsp salt

1 tsp baking soda

3/4 cup almond butter

1/4 cup coconut oil

1/2 cup coconut sugar

1 tsp pure vanilla extract

1 egg

Optional: almonds for garnish

Preheat the oven to 350 degrees. Spray two baking sheets with cooking spray. In a mixing bowl whisk together the flour, salt, and baking soda. In another bowl beat together the oil, almond butter, and coconut sugar until fluffy. Add the vanilla and egg and beat until fully combined. Slowly stir in the flour mixture and blending well.

Take about 1 heaping tsp of batter, form into ball and place on baking sheet. Press down lightly an optional almond as a garnish in the middle. Bake for about 12 minutes.
