Almond Butter Cookies

Everyone is always looking for that perfect cookie. But many that are considered "dietetic" are usually made with highly processed ingredients and a ton of carbs. Here is a great spin on an almond butter cookie that is completely gluten free, kosher for Passover, dairy free and delicious.

Almond Butter Cookies

A gluten free option for an almond butter cookie.


1 cup coconut sugar
1 cup almond butter
3/4 cup coconut oil
2 eggs
1/4 cup almond milk, unsweetened 
2 tsp pure vanilla 
3 1/2 cups almond flour 
2 tsp baking powder
1 tsp salt 
1 package dark chocolate chip cookies 


Mix wet and dry separately. Slowly and continue slowly mixing, add dry to wet. Fold in chips. 
Bake about 17 minutes on 350F. Be sure to check on the cookies. You want the consistency to still be soft in the middle but NOT raw. Do not overcook or they burn. Take out a little before completely hardened and allow them to continue to heat up on the baking sheet while cooling down outside of the oven.
