Asian Beet Salad

my dinner plate

with a new starchy veggie alot of people aren't aware of,

and/or don't know how to prepare,

especially as part of a dinner meal.


Packed with essential nutrients, beetroots are a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C.

Beetroots and beetroot juice have been associated with numerous health benefits, including improved blood flow, lower blood pressure, and increased exercise performance.

Although an earthy flavor, that hint of sweeteness cateogirzes these guys more towards a "loose" carb count versus a non-starchy veggies. Aim for about 1 cup as part of a balanced meal on the BWN Method.

Asian Beet Salad

A delicious option for a carbohydrate starchy vegetable side dish.


8 ready-to-eat beets

4 scallions, chopped

1/3 cup rice vinegar

1/4 red onion, chopped small (or grated)

2 tbsp fresh ginger, chopped small (or grated)

2 tablespoons low-sodium soy sauce

1 tablespoon honey

3/4 cup extra virgin olive oil

Sea salt and pepper, to taste


In a bowl, place the beets and scallion. In a blender, and the rest of the ingredients and blend until combined. Pour over the salad and toss together.
