Bananas for Banana Bread

I cannot believe we are in midst of another year of Passover. With the holiday where we cannot eat any gluten that has risen, I decided to come up with some recipes that are entirely gluten-free and perfect for any time of year.  Banana bread is one of those clean treats that a little added sweetener goes a long way. I'm always game for an indulgence that we can feel good about in our mind and body. I debuted this recipe in my national TV spot for NBC's Daytime. Check out the video here and get the recipe below!

Banana Bread

A healthy gluten and dairy free banana bread.

Ingredients

Ingredients:
1-2 ripe bananas smashed
3 eggs, whisked
1/4 cup coconut oil, melted
2 tbsp honey
1 tsp pure vanilla extract
3 cups almond flour
1 tsp cinnamon
3/4 tsp baking powder
1/2 tsp baking soda
1/2 teaspoon salt
1/4 cup dark chocolate chips (optional)

Instructions

Preheat oven to 350 degrees. Spray a bread pan with cooking spray. Whisk together eggs, oil, honey and vanilla. Mix in the banana. In a separate bowl, mix together the flour, cinnamon, baking powder, baking soda and salt. Slowly add the flour mixture into the egg mixture while continuously stirring. Mix until combined, but do not overmix. Fold in the chocolate chips. Pour batter into the pan. Bake at 350 degrees until a knife inserted comes out clean, about 1 hour. Cool for about 10 minutes.
