Bean Salad with Apple Cider Vinaigrette

Bean Salad with Apple Cider Vinaigrette using pantry staples

Ingredients

1 15 oz can kidney beans 
1 15 oz can black beans 
1 15 oz can chickpeas 
1 15 oz can green beans 
1 4 oz can corn 
Chop a little jalapeño, red onion, add parsley or cilantro 

 

Pantry staples with what you see here 


Tossed with 
1/4 cup of this ­čĹç­čĆ╗
­čŹĆApple Cider Vinaigrette­čŹÄ 
2/3 c evoo
1/2 cup Apple cider vinegar
1 tsp sea salt
3 tbsp Dijon mustard
2 tbsp fresh lemon juice 
Black pepper, to taste  
1/4 red onion chopped very small
