CAULIFLOWER LEEK SOUP

Ingredients
- 3 leeks - chopped up
- fresh or frozen cauliflower
- 3 cloves garlic
- Salt
- Pepper
- 1/2 cup soaked cashews
- 2 teaspoons white miso paste
- Fresh lemon juice
- Smoked paprika
Instructions
Place chopped leeks, cauliflower, and garlic on a big baking sheet. Drizzle with olive oil, salt and pepper and roast on 400 for at least 25 minutes.
Take soaked soaked cashews and place them together with the previous ingredients. Pour in lemon, miso sauce and smoked paprika. Blend up and ENJOY!
