COCONUT TURMERIC SMOOTHIE

I’ll never forget the experience I had this past December 2019 at Kinkara in Costa Rica, and how at peace I felt. I promise, it was the entire aura of the place, and the medicinal properties of this TURMERIC COCONUT SMOOTHIE helped too ­čśŹ Traveling there only 2 months post partum back in Dec and breast pumping like a cow ­čś│ EVERYWHERE AND ANYWHERE (and um, did I mention I slept in a glamping tent, no electricity, with a shared bathroom - btw nicer than my personal home one). 

I’m so grateful that I did NOT give into the “How am I going to pull this off?” And instead surrendered to the knowledge that I NEEDED to pull it off bc this boss momma was STRESSED. I can’t imagine where I would be through all this stress we are currently experiencing if I didn’t have those 2 nights to myself in this oasis. Lesson learned: never put off your need for self care. It’s not selfish. Only GD knows what the heck will happen in this world so make a move NOW!

COCONUT TURMERIC SMOOTHIE

A coconut turmeric recipe from the exotic Kinkara Costa Rica Kitchen

Ingredients

1 cup thin coconut milk
1/2 cup frozen pineapple
1 frozen banana
1 tbsp coconut oil
½ inch piece of turmeric, peeled and grated (alternately you can use 1/3 tsp of turmeric powder)
pinch tsp cinnamon powder
1/2 tsp ginger, grated
1 tsp chia seeds
1 tsp maca
3-4 Ice cubes

Instructions

1. Blend all the ingredients until smooth, approximately 2 minutes.
2. Pour in the glass and serve immediately.
