Egg and Sweet Potato Hash
Working a BWN Virtual day meant I took a few to whip up a warm and cozy breakfast.
As daunting as this May look- it’s not. These days you can find non starchy and starchy veggies already cut and I always prep a starchy veg roasted/sautéed at the beginning of the week to quickly “throw in” to a complete meal like this!

Egg and Sweet Potato Hash
A complete meal from eggs and plantbased sweet potato carbs and veggies
Ingredients
2 eggs
1/2 sweet potato, chopped small
2 celery stalks, chopped small
1/4 red onion, chopped small
Salt and Pepper, to taste
1 tbsp avocado or extra virgin oil
Optional: Sriracha
Instructions
In a skillet on medium-high flame, add the oil and veggies. Stir and saute until it begins softening about 7 minutes. Create a "hole" in the center and add the two eggs. Cook until desired consistency. Season with salt and pepper. Drizzle with sriracha, if desired.
