Grilled Corn Salad

Summertime is synonymous with BBQ's. At BWN, we want you to enjoy any situation and live your real life! But don't overlook how helpful and exciting it is to have a healthy side dish that is all about the BBQ vibes too! This corn salad helps maximize a carb portion from a starchy vegetable by enhancing it with other veggies. Plus, the grilled component makes it perfect for a BBQ craving.

PS. A great idea for a BBQ is to grill up some pineapple (with a sprinkle of Tajin or chili lime spice for added flavor) for a sweet treat after a BBQ...trust me, you'll thank me later!

Grilled Corn Salad

A delicious plant based addition of corn salad to your BBQ.

Ingredients

🌽3 ears corn, grilled then cut the kernels off
🌽1 red onion, sliced and grilled
🌽1 jalepeno, grilled, then chopped
🌽9 cherry tomatoes, halved
🌽1 avocado, chopped
🌽1 small handful parsley, chopped
🌽1 small handful mint leaves, chopped
🌽Juice of 1 lime
🌽4 tbsp avocado oil
🌽Salt and pepper, to taste

Instructions

Combine all ingredients together. Flavor get even yummier the more time it has to "chill".
