HEALTHY ON-THE-GO BEACH SNACKS

Spring is all about shaping up before bathing suit season, but then once summer comes it’s like a downward spiral.  More relaxation and free time means more lunches with friends, poolside barbecues, ice cream, and virtually temptation everywhere.  Same goes for children attending day camp and consuming more sugary snacks and beverages. When it rolls around to the weekend, you’re all for taking your kids to the beach and for fun family outings, but rather not have them indulge in french fries and slurpees too much.

 

So what’s a mom to do?  Try packing your own healthy snacks for outings that are easy to transport.  The video below has the perfect kid-friendly treats that they’ll love, without feeling left out.  Sweet, nutritious, and great on-the-go!



 
Kids love almond date balls, which are loaded with fiber and protein. Make the process more fun by rolling them in cocoa powder or unsweetened coconut once they’re formed. Freeze them for longer storage and pack them up to take with you on-the-go. Almond butter muffins are another great snack for the beach, pool, or wherever you’re headed with the family. Gluten free, naturally sweetened, and so simple to make. Chia seeds help bind the muffins and add extra protein and fiber, while oats add a whole grain component (make sure to use gluten free oats if needed). Chocolate chips are usually a favorite amongst kids and adults alike. Dark chocolate contains flavonoids and antioxidants; the darker the chocolate, the better.

 

Enjoy these healthy snacks with your family, and make it a fun activity by getting everyone involved!

Gluten Free Almond Butter Muffins

Yields 1. You don't even need a mixer to make this easy muffin!

Ingredients

 

  • 1 cup chunky almond butter
  •  
  • 2 eggs
  •  
  • 2 tsp vanilla
  •  
  • 2 tbsp chia seeds
  •  
  • 1 tsp baking soda
  •  
  • 1 banana, mashed
  •  
  • 1 cup oats
  •  
  • 1/4 cup bittersweet chocolate chips, optional

Instructions


Preheat oven to 350 degrees.


Whisk the eggs in a mixing bowl.


Add in one mashed banana and vanilla.


Mix in the almond butter.


Then add baking soda, chia seeds, oats, and chocolate chips if desired.


Fill sprayed muffin cups and bake for 10-15 minutes.

Almond Date Balls

Use a vitamix or high powered food processor for a sweet, quick treat kids love!

Ingredients

 

  • 1 cup raw almonds
  •  
  • 1 cup raw walnuts
  •  
  • 8 dates, pitted
  •  
  • 1/4 tsp. cinnamon
  •  
  • 1 tsp. vanilla
  •  
  • 1/2 cup shredded coconut
  •  
  • 1/2 cup cocoa powder, unsweetened
  •  

Special equipment: Vitamix or blender

Instructions

 

  • Chop almonds in mixer, not too finely - you don't want to make almond flour.
  •  
  • Add in dates, cinnamon, vanilla and blend together.
  •  
  • Add in a couple drops of water if needed.
  •  
  • Roll into balls and dip in toppings (ie: cocoa powder, unsweetened coconut) if desired.
