Kale Lentil Burgers

I should call these the,
"food box veggie burgers"
because I created them
out of ingredients that came in my school's food boxes.
I'm grateful for the box idea that came out of quarantine, 
there really help us feed our families.
But when it comes into the home,
my mind automatically goes to,
"What do I do with these?!"

I built a base of onion and garlic saute,
and then added a bunch of the other ingredients below,
gratefully from the boxes.

I realized I had the makings of a yummy lentil burger,
and with the just the right seasonings, it came out perfect.


Kale Lentil Burgers

A kale lentil burger that's a perfect plantbased option.


1 onion, chopped 

2 cloves garlic, crushed

1 tbsp EVOO

16.9 oz bag ready-to-eat lentils

1 bag frozen kale, 16 oz

3 baby red, yellow AND orange peppers, chopped

1 tbsp onion salt

Dash cayenne pepper (per taste)

Salt and pepper, to taste 

1 tbsp flour (any)


Saute onion and garlic until translucent. Add in the red peppers, soften for 3 min, then lentils and kale. Stir and cook about another 3 minutes with seasoning. Turn off flame, stir in the flour. Using 1/4 cup, make burgers and place on baking sheet lined with parchment paper. Bake 350F 25 min.
