Miso Eggplant

I get it.

Veggies can get a bit booorrrinnngg.

But that's when your plantbased repertoire
extends as far as lettuce.

Try broadening your produce horizons,
and try this MISO EGGPLANT.

Miso Eggplant

A delicious veggie recipe using miso and eggplant


4 medium eggplants, sliced
4 tbsp white miso paste
Juice of 1 lime
1 tsp maple syrup (or honey)
1 tsp sesame oil
1/8 cup sesame seeds


On a large baking sheet, lay the sliced eggplant. In a small bowl, combine the rest of the ingredients (until the sesame seeds) and mix together. Latter the sauce on all sides of the eggplant. Sprinkle sesame seeds. Put the oven on BROIL and broil both sides of the eggplant for 6 minutes per side.
