Peanut Butter Cookies

Some would say nuts are high in fat and contain a lot of calories. I say nuts are rich in healthy fats and contain many beneficial nutrients. For starters, nuts are high in fiber and in protein which help us stay satisfied and energized. We all know how important it is to incorporate protein with every meal and a small handful of nuts is just the perfect snack and will help control your appetite. Don’t forget to be mindful of your portions. It is proven that nuts stimulate your body to burn excess fat and will help shed extra pounds. Nuts also contain plenty of antioxidants which help prevent any possible damage to our cells that are caused by oxidants. Oxidants are free radicals found in the environment, like pollution and second hand smoking. There is a test that measures a food capacity to fight those oxidants and studies have proven that walnuts were actually greater than fish. Nuts also contain Omega 3 fatty acids, iron, magnesium, and, they’re rich in potassium which all are essential to a healthy life style and to keep on the right path. My peanut butter cookies will take your sweet and salty craving away leaving you feeling satisfied! 

Peanut Butter Cookies


1 cup spelt flour

2 eggs

1 tsp vanilla

1  15oz jar natural chunky peanut butter (or smooth)

1/2 cup melted coconut oil

1  1/2 cups cocnut sugar


Mix to combine 

Drop by rounded tablespoon onto baking sheets

Bake on 350 degrees
