Salmon Teriyaki Broccolini
I originally made this salmon recipe without measurements.
I like going with my taste buds as a guide, and I encourage you to do the same!
But just in case, I wrote out out this Salmon Teriyaki with Broccolini.
I'm always amazed how "extra" people cook a recipe like these -
loaded with TONS of sweeteners,
it almost takes away the taste of the fish itself!
Any marinade or dressing should enhance the flavor of the main ingredient, not disguise it.
Plus, the health benefits and cost effectiveness of keeping it more simple and light are worth it.
Ingredients
2 pieces of wild salmon
1-2 packages broccolini (I buy from Trader Joes)
Teriyaki Marinade:
1 tbsp extra virgin olive oil
2 tbsp teriyaki sauce
2 tbsp maple syrup
1 tbsp fresh lemon juice
1 tsp salt
Other:
extra virgin olive oil
salt
pepper
Instructions
Preheat the oven to 350F. On a baking sheet lined with parchment paper, lay out the broccolini. Drizzle with oil, sprinkle salt and pepper and mix. Place in single layer as much as possible. Place the fish on top. Brush the marinade on top and around all sides. Bake for 20-25 minutes on 350F. Feel free to broil the last 5 minutes for a crispy feel.
