Soffritto Lemon Sole

I gotta hand it to Trader Joe's...
When it comes to spice blends, they take the cake (or take over the cabinet!)
The best part?
They're made from whole food ingredients
so there's nothing to feel guilty about by using most of their options
to quickly season your foods.
I found this Italian Seasoning with Soffritto Blend,
that has a combo of crispy onions, sun-dried tomatoes, sea salt, garlic, red peppers, parsley, rosemary and sage.
My mind immediately went to "white fish".
I chose lemon sole which gave such a nice enhancement of flavor.
Try it on any white fish variety!

Soffritto Lemon Sole

A delicious Italian style flavor blend with your new fave white fish!


2 lb lemon sole, cut into small rectangle pieces (flounder would work great, or any white fish)
2 tbsp Soffritto Spice (or similar homemade blend) available at Trader Joe's
1 tbsp extra Virgin olive oil
Juice of 1 lemon
Rind of 1 lemon


Marinate about an hour or as long as you have time for (or not!). Preheat the oven to 350F. Place on baking sheet lined with parchment paper, spaced and not layered. Bake at 350F for about 12-15 min.
