Spelt Cinnamon Buns
Ingredients
Dough
1 Tbsp honey (or pure maple syrup)
2 Tbsp dry yeast
2.5 c milk of choice warmed (almond/oat)
1/3 c melted plant based butter
1 Tbsp kosher salt
1 egg
3/4 c honey
8/8.5 c spelt flour
Filling
1.5 Tbsp cinnamon
2/3 c coconut sugar
1/4 c light olive oil
Glaze
2 Tbsp coconut oil (melted)
2 Tbsp milk of choice
1.5 c organic powdered sugar
Instructions
Stir in yeast, milk, and (tbsp) honey and let sit until foamy. Add in butter, salt, the rest of honey and flour - pouring in slowly until the dough is slightly sticky. Spread oil around the dough, cover it and let it rise for 1-2 hours.
Spray oil on baking sheet and spread the dough onto large baking style sheet. Roll the dough out until extremely flat and smooth. Mix cinnamon, coconut sugar and oil and spread the filling over the dough. Roll it up and slice. Place about a dozen rolls in a 9x14 pan and let it rise for appx 20 minutes.
Bake in oven for about 25 minutes on 350f. (While warm, pour glaze over the rolls.)
