Sweet and Smokey Bronzino

Looking for a light and summery one-dish dinner? Not only is this dish packed with veggies and flavors, Bronzino is also filled with nutrients, such as protein and vitamin D. Fish is also a great source of Omega-3, which is important for your body and brain. 

Sweet and Smokey Bronzino


1 tbsp extra virgin olive oil
2 cloves garlic, crushed
1 smaller red onion, sliced in half-moons
1 cup baby portabella mushrooms, sliced
Bunch of thin asparagus, roughly chopped
1/2 cup sliced green olives (spicy if you like it hot)
4 plum tomatoes, chopped
1/4 cup smokey coconut aminos (or regular, or balsamic vinegar!)
6-8 pieces Bronzino fillet (or any white fish)
Salt and pepper, to taste


Sauté the onions and garlic until fragrant. Add in the other veggies to cook until starting to soften. Add in the olives, tomatoes, and coconut aminos. Stir and cook together until soft and reduced, about 8-10 minutes.
On a baking sheet lined with parchment paper, place the fish in a single layer. Add salt and pepper to the fish. Pour on the veggie mixture. Bake at 350 for about 10-15 minutes.
