Thankful Wednesday's

THANKFUL-
We can use the reminder
that although we can’t always change our circumstances,
we can choose 
to STOP the negative thoughts and moods that may come from them  (especially on a #humpday Wednesday),
and find something to be thankful for...
Especially when the kids literally have NOT had one full week of school this entire month of October ...
really, tho,
I counted the school calendar yesterday myself 😳...
(are they even in school or am I in delirium from lack of sleep from the newbie baby😴!?)
I don’t think any mom should ever feel guilty about feeling overwhelmed because this season is ALOT!
Doesn’t mean we don’t love being with our kiddos any less 😍
Used this AM to choose to revel in the lack of schedule-
yet again-
and enjoy these moments with all of my babies 
and baking time by Channah with these delish bundles of yumminess
with our heavily overripe bananas we didn’t want to waste!
 

🧁Peanut Butter Banana Muffins🧁

Easy Healthy Muffins (modified from banana bread recipe)

Ingredients

🍌2 ripe bananas
🍌1 egg 
🍌1 cup almond flour 
🍌1/2 cup peanut butter (you can easily use almond but my kids like Pb)
🍌1 tsp vanilla 
🍌1 tsp baking powder 
🍌1/4 cup honey (we didn’t even use because the bananas were overripe and sweet)
🍌handful dark chocolate chips 
 

Instructions

Whisk together the egg, vanilla, and banana. Continue to mix in the pb and honey (if using) Add the flour and baking powder and combine but don’t over mix. Bake at 350 about 25 min. 
And in this moment... THANKFUL for my newly appointed nurse for holding the baby while mommy styled the photo and allowed me to get the recipe out to all of you (swipe left for bonus pic- she’s not who you think it is 😉)
