Zucchini Latkes

Happy Hanukkah!

Of course, there's nothing like the classic latkes recipe made with potato and deeply fried,
but here's another plantbased alternative using zucchini and alot less oil.
It's based on the Syrian-style "edje" concept,
but can easily be baked as well while still honoring the celebration of oil by including it as an ingredient.

Zucchini Latkes

A latkes made with zucchini for a veggie side

Ingredients

4 spiralized zucchini
1 small onion grated or chopped
2 whole eggs
1 egg white
pinch of salt
pinch of pepper
cinnamon to taste
1 tsp all spice
2 tbsp. almond flour

 

Instructions

Mix all ingredients together.
Form patties (it’s okay if it doesn’t stick together)
Pan fry in 3-4 tbsp avocado oil on each side or bake with drilled olive oil on top and flip in middle of baking about 7 min each side.
