Zucchini Latkes

Zucchini Latkes
4 spiralized zucchini
1 small onion grated or chopped
2 whole eggs
1 egg white
pinch of salt
pinch of pepper
cinnamon to taste
1 tsp all spice
2 tbsp. almond flour
Place 1 tbsp melted coconut oil

Mix all ingredients together.
Form patties (it’s okay if it doesn’t stick together)
3-4 tbsp olive oil on each side or bake with drilled olive oil on top and flip in middle of baking about 7 min each side.
